Dinner: Quesadilla, Quesadilla!!!

Chicken is a huge part of my diet and I love Mexican I decided to make a quesadilla a la Kim style. I seasoned my chopped chicken breast then pan fried them in olive oil with red and green peppers, onions and mushrooms. After I placed the mixture onto the flat tortilla wrap, I then covered with a few slices of provolone cheese, then placed the other shell on top. I baked in the oven until the cheese was all melted. This came out good, next time I will add cheese on both sides and add some Mexican seasoning to my chicken...I think that will give it the taste I'm tasting for :)
